Pea ingredients value chain at a regional scale (North East of France)

If harvested at maturity, the yellow pea is rich in energy and protein. Vegetable proteins are widely claimed by consumers and considered by 83% of the French population as essential to their food. The number of food products containing vegetable proteins in France is continuously increasing, with an increase of 36% between 2011 and 2013 and of 18% between 2013 and 2015.

The case study on yellow peas produced in France will focus on the pea ingredients value chain through interviews of some stakeholders involved in it. In the current dynamic context, yellow pea ingredients stand out particularly because they are "produced in France", "gluten-free" and "non-GMO".
